Kogane-Sengan sweet potatoes from Kagoshima Prefecture are fermented with white koji mold, distilled at atmospheric pressure, and rested for extra long period.
Aged at least 3 years in oak casks, it results in an exceptional flavor that is described as rich and mellow.
